Maya cooking has deep roots: local ingredients, techniques older than the Spanish conquest, and recipes handed down through generations. Along the Riviera Maya you can still taste that history in dishes that pair pre-Hispanic staples such as corn, pumpkin seeds and achiote with the pork, citrus and spices that arrived from Spain. If you want to understand the cuisine in the Riviera Maya, start with the traditional Maya table.
Must-try dishes
Cochinita pibil
The best-known Maya dish of all. Pork is marinated in achiote and bitter orange, wrapped in banana leaves and slow-roasted, traditionally in a pib, an underground pit oven. It comes out tender and deep orange, and it is usually served in tacos or tortas with pickled red onion and habanero. In Playa del Carmen you find it at fondas and taquerías downtown, almost always in tacos or tortas.

Papadzules
Less famous than cochinita, but well worth seeking out. Papadzules are soft corn tortillas filled with chopped hard-boiled egg, coated in a pumpkin seed sauce and topped with a cooked tomato salsa. The recipe is pre-Hispanic and probably one of the oldest in the Yucatán Peninsula. Look for it at fondas and family-run restaurants throughout the Riviera Maya.
Sopa de lima
A Yucatecan classic: chicken broth flavored with the juice of the lima, the fragrant local citrus that gives the soup its name, and finished with crisp tortilla strips. Refreshing and filling at the same time, it is the ideal lunch after a morning of exploring. Don Cafeto, on Avenida Tulum in Tulum's town center, serves a good version, and La Cueva del Chango in Playa del Carmen has it on its dinner menu.
Maya-inspired dining experiences
Some restaurants go beyond the menu and turn dinner into a cultural experience. At KIN Toh, in AZULIK Tulum, you eat in "nests" suspended above the jungle canopy, from a menu that reworks traditional Maya ingredients and techniques into contemporary dishes. Between the treetop views, the organic architecture and the sunset, the setting is as memorable as the food.
